Khichri or khichdi is a warming dish of rice and lentils, wholesome, simple and hits the spot. I believe kedgeree is a dish that came from khichri- it’s good with curry and yogurt.
Ingredients
- 150g split green moong
- 150g basmati rice (or khichdi rice if you have it)
- 1 tsp salt
- ½ tsp turmeric
- 1 tbsp ghee or butter
- 250ml water
Method
- Mix the moong and the rice and rinse in hot water, and soak in cold for as long as you can.
- Boil the water and when boiled add to a saucepan.
- Add the soaked rice and moong mix, the salt and the turmeric.
- Boil until the rice and moong has cooked and the water has been soaked in. Keep an eye on it as it can boil over o burn easily
- When the rice and moong has cooked and the water has gone, the khichri should have the texture of a slightly thick porridge.
- Add the ghee or butter and serve, with yogurt, pickle or curry.
