Simple Khichri or Khichdi Recipe

Khichri or khichdi is a warming dish of rice and lentils, wholesome, simple and hits the spot. I believe kedgeree is a dish that came from khichri- it’s good with curry and yogurt.

Ingredients

  • 150g split green moong
  • 150g basmati rice (or khichdi rice if you have it)
  • 1 tsp salt
  • ½ tsp turmeric
  • 1 tbsp ghee or butter
  • 250ml water

Method

  1. Mix the moong and the rice and rinse in hot water, and soak in cold for as long as you can.
  2. Boil the water and when boiled add to a saucepan.
  3. Add the soaked rice and moong mix, the salt and the turmeric.
  4. Boil until the rice and moong has cooked and the water has been soaked in. Keep an eye on it as it can boil over o burn easily
  5. When the rice and moong has cooked and the water has gone, the khichri should have the texture of a slightly thick porridge.
  6. Add the ghee or butter and serve, with yogurt, pickle or curry.
